For my mom's birthday, I decided to order a cake from DORE by LeTAO. Since they're best known for their Fromage Cake, I knew I had to try it. For those who aren't familiar, fromage simply means "cheese" in French. A fromage cake is a Japanese-style cheesecake that focuses on a light, creamy texture rather than being dense like a New York cheesecake. DORE's signature version combines rich cream cheese and mascarpone, creating a cake that's smooth, airy, and melts beautifully in your mouth. Of course, I ordered their classic Fromage Cake, but I couldn't resist adding their seasonal special, the Ruby Fromage. The Ruby Fromage was the one I was most excited about because it uses ruby chocolate—a naturally pink chocolate made from specially selected cacao beans. Unlike white chocolate with food coloring, ruby chocolate has its own naturally fruity, slightly tart berry-like flavor, making it taste completely different from traditional milk or dark chocolate. I thought the combination worked surprisingly well. The creamy mascarpone balanced the refreshing tanginess of the ruby chocolate, creating a cheesecake that felt rich without being overly heavy. It was sweet, slightly fruity, and definitely something a little different from your typical cheesecake. As for the classic Fromage, I can see why it's their signature. The texture is incredibly light and silky, with a delicate cheese flavor that's not overpowering. Even people who don't usually enjoy heavy cheesecakes would probably appreciate how balanced it is. Overall, both cakes were delicious, but if you're visiting DORE for the first time, I'd still recommend starting with their classic Fromage to experience what they're famous for. If you're looking for something a little more unique, the Ruby Fromage is a fun seasonal twist that's well worth trying while it's available. 🎂🧀💗
